Healthy eating is has never been something that comes naturally to me, food is such a hobby in my life, so healthy eating used to feel like it took away the fun. Over time, my relationship with food has drastically changed as I've seen you can love food and take care of your body!
Asian food is my weakness, and can also sometimes be the trigger for feeling pretty over-served. This recipe is the perfect compromise when you want an oriental taste with a healthy twist! Hope you all enjoy.
Recipe:
Asian Meatball & Cauliflower Rice Bowls
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Serving: 20ish meatballs
Meatballs:
2 lbs of ground beaf
1 large egg
1/2 tsp of ground ginger
1/2 tsp of sea salt
1/2 teaspoon of ground black pepper
1/3 cup of chopped onions
1/2 cup of almond flour
1 tbsp of coconut aminos (omit if not on hand)
1/2 tsp of garlic powder
green onion for garnish
Sauce:
1 cup of coconut aminos
1/2 cup of rice vinegar
2 1/2 tbsp of water
1 clove of garlic, minced
2 tsp of sesame seed oil
1/2 tsp of ground ginger
2 tsp of cornstarch, add as needed
Instructions:
Preheat oven to 400 degrees and coat a baking sheet with cooking spray.
Add all meatball ingredients to a bowl and mix until well-combined.
Form the mixture into roughly 20 golf ball sized rounds. Place on coated pan and bake for 20 - 25 minutes.
Add all sauce ingredients (except for the cornstarch) into a skillet on medium / high heat. Once the sauce has some heat to it, add the cornstarch to thicken. Stir frequently, this could take a few minutes!
Once the meatballs are finished baking, add them to your sauce pan and toss to coat. Serve over cauliflower rice with some yummy veggies and enjoy your healthy but tasty meal!
