I'd be lying if I said I didn't embrace every pumpkin spice treat and Halloweentown movie night when September 1 hits. Fall is a sentimental time of year, and I spent the last four years in Fayetteville, Arkansas where all four seasons cycle through each year. Northwest Arkansas bleeds vibrant red and citrusy orange trees when the fall months arrive. My little corner of Arkansas is the most magical place to spend time as the air begins to chill, but this year it was no longer my corner to call home.
I moved in with my parents in Plano, Texas. North Dallas doesn't exactly give you the same autumn vibes, but I made do in the kitchen. One October evening, I was longing to pile my friends around my small kitchen table over purple plates to eat pasta and forget that our time in Fayetteville would one day end. Said longing turned into cooking, and said gathering turned into my family around the table where I ate dinner growing up. Change is hard for me, and this past year threw it my way at every turn.
But! With Fall comes nostalgia, sentimental movies and recipes, and the taste of fall flavors! This Butternut Squash Pasta Carbonara is the perfect marriage of sentiment and flavor. Creamy from the squash and a fresh bacon crunch make this pasta they very best comfort while the leaves fall.
