Cooking is something I love because I get to follow systems. My stickler tendencies are also my biggest downfall, so I've had to let the reigns loose when it comes to cooking and just enjoy myself.
This is a recipe that balanced perfection and chilling out. It's one you can follow, but also make your own. There really isn't much to say about it other than it's delicious, and you should roast some chicken in butter and sage to give it some company. Enjoy!

Recipe:
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4
Ingredients:
3 tbsp of butter
1 tbsp of olive oil
1 to 1 1/2 lbs of mushrooms, torn into quarters or sliced
1 bell pepper, color of choice
Day old loaf of bread (I used some leftover homemade ciabatta which was delicious)
2 cloves of garlic or one shallot
1 tbsp of white wine vinegar
Fresh chopped greens (spinach, kale...)
8 ounces of cheese (mozzarella, parmesan, burrata...)
Red pepper flakes to taste (optional)
Salt and pepper to taste
Instructions:
Melt the butter and oil over medium heat in a heavy skillet.
Add mushrooms to pan to cook (patience is key) until golden brown.
Meanwhile, grill or toast the bread.
Once your mushrooms are golden, add the garlic or shallots, stirring constantly for about a minute. Add your peppers. Drizzle with the vinegar and season with red pepper flakes, salt, and pepper. This part is important- don't be tempted to season your mushrooms before this point or they will dry out, and who likes dry mushrooms? Add your greens and let them cook, if you're using spinach don't let it cook for too long. Adjust seasonings if needed.
Tear toasted or grilled bread and nestle in the vegetables. Sprinkle your cheese on top. Turn the heat to medium-low and cover the skillet to allow cheese to melt (will differ with various cheeses).
Add some more red peppers flakes if you're into spice.
Serve immediately and enjoy with a protein of choice if desired.
