When I was younger, I was never a breakfast person. Why put energy into making a morning meal when my top priority is a cup of joe? Despite my lack of breakfast experience due to early mornings spent snoozing until time only allowed for a Keurig cup (don't judge- we'll talk about this later), I have grown to be someone who not only loves breakfast, but literally dreams about what I will stumble into the kitchen and whip up the next morning.
Avocado toast has become my go-to! It's on the healthier side and is a wonderful breakfast for when a bomb breakfast is part of the plan, but too much energy isn't. Heavy on the spice and runny on the egg, this toast is simple and the best. Enjoy!

Recipe:
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 1 toast
Ingredients:
1 slice of bread of choice (when I am wanting something low cal I like to use Dave's Killer Seed bread)
1/2 of one large avocado
1 egg, fried over easy
Salt and pepper to taste
Drizzle of Siracha, optional
Instructions:
Toast a slice of bread to your desired level of crispiness! I usually like to do it as crispy as possible without burning it.
Meanwhile, cut open your avocado and spoon out half into a bowl. Generously salt and pepper to taste and smash together until it reaches a spread-like consistency.
Now move on to your egg! Heat a skillet and spray with non-stick cooking spray. Crack an egg into the skillet and fry until the whites cook. Flip and then cook for about a minute. Remove from heat.
Lastly, assemble your toast! Spread avocado mash onto bread, lay egg on top and sprinkle with salt and pepper. Drizzle with Siracha, Sambal, cheese, Everything Bagel Seasoning, or any other topping if desired! Bon Appétit!
