HOMEMADE CRUNCH WRAP

Perk of working from home #1- your kitchen being your office and being able to join Molly Baz's impromptu Instagram live cooking sessions.


Molly's style inspires me beyond the kitchen, so her quarantine IG lives have been a much needed pick-me-up on days where lack of human interaction gets the best of me.


These delectable crunch wraps are inspired by Molly's creation, but have my own "what I had in the fridge" twist! Take a lunch break today and treat yourself to these bad boys- you won't regret it.

Recipe:


Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serving: 2 crunch wraps


Ingredients:

  • 2 tortillas

  • 2 eggs

  • 1/4 of one red onion

  • 2 tbsp of greek yogurt

  • 1/4 cup of cilantro, chopped

  • 1 tbsp of Sambal

  • 2 tbsp of extra-virgin olive oil

  • Salt and pepper to taste

Instructions:

  • Prepare your ingredients. Chop your cilantro, slice the onion, and have your yogurt / Sambal / salt + pepper on hand.

  • Heat a skillet over medium heat and spray will non-stick cooking spray.

  • Crack each egg into hot skillet and let the whites cook. Once whites are cooked, begin to break the yolks and scramble them in with the whites. (Molly coined this in her IG live as marbled scrambled eggs! They are tasty and beautiful.)

  • Remove eggs from heat and begin assembling your wrap! Smear yogurt and Sambal onto the outer side of both tortillas. Lay eggs and onions on top of smear, sprinkle with cilantro. Be careful to not over fill and be conscious to place ingredients toward the edge of the tortilla so it will be easier to roll.

  • Fold in the sides of each tortilla and roll into burritos.

  • Heat olive oil in same skillet over medium heat. Place wraps into hot oil and allow them to crisp and become golden on all sides.

  • Cut in half for that yummy shot and enjoy!
